


Thomas
Anthony Merolla career started in 1995 with the opening of Ian Schrager's
iconic Delano Hotel. He remained at the famous Rose Bar until late 2008 then
began beverage consulting by structuring operations and writing cocktail menus
for both the Rose Bar and Pool Bar at The Delano Hotel. He then moved to the Sunset Lounge at Mondrian
Hotel South Beach, another Morgans Hotel Group property, where he played an integral
role in implementing a Brazilian inspired beverage program which received
"Best Place in Miami to Get a Cocktail" by the Miami New Times.
Thomas has also opened Wall Lounge at the W hotel in Miami Beach, and has since
been hired to help manage the hotel's mixology bar, The Living Room, which is
one of the most progressive bar programs in Miami Beach. Thomas has also helped
conceptualize B Bar at The Betsy Hotel, which recently has been nominated as “Best
Hotel Lounge in Miami” by the New Times. Thomas has put B Bar on the mixology
map by building their program from the ground up. Thomas still works as Mixologist
and Creative Director at The Betsy Hotel. He has also recently placed in two
local competitions for both Ron Abuelo rum and Sauza tequila. Thomas also
placed second and third and won People's Choice for the national competition
Ultimate Cocktail for a Cure. Thomas' upcoming projects include Deck (an
organic mixology bar) at The Betsy Hotel and Wet (ocean front bar) at the W
Hotel Miami Beach. He has also just completed the cocktail menu for Solea
Restaurant in the W Hotel Miami Beach.

Paul
With
over twelve years of experience in the hospitality industry, Paul Sevigny has
been breathing new life into the cocktail scene in Miami. Getting his start in Providence, Rhode
Island, Paul worked as the Beverage Manager at Moda Restaurant and Lounge where
he developed his first cocktail menu. In
late 2006, Paul moved to Miami where he began working with celebrity chef
Govind Armstrong at his Table 8 South Beach hot spot as Beverage Manager/Mixologist.
It was not long before Paul’s tasty libations were being noticed on a local and
national level. He went on to become Table 8’s corporate mixologist, developing
all beverage menus for Table 8, and 8 oz Burger Bar restaurants nationally.
Paul’s approach is simple: fresh high quality ingredients, a well-trained
palate, and an appreciation for the classic cocktail. With his passion for the
Beverage industry, creativity, and love of a good cocktail, Paul founded Splash
Cocktail with co Table 8 South Beach Mixologist Robert Ortenzio. Paul has
developed cutting edge beverage programs for many hospitality venues such as D.
Rodriguez Restaurant Group, Meat Market, and Cut432. Paul also consulted on the cocktail menu at
the Setai South Beach, which is considered one of the most cutting edge cocktail
menus in the industry. Paul has won many cocktail competitions including 42
Below Vodka Cocktail World Cup representing Miami in the United States Finals,
and placed in the Cheery Heering Accessorize world cocktail competition as a
United States finalist. You can
currently find Paul mixing his creative libations at the Florida Room at the
Delano Hotel in South Beach.
